Recipe: Mum's Lasagne


Mum's lasagne is quite famous in our family. We're not Italian (Unfortunately) so im not sure how authentic the recipe is, but it is really tasty and is even better the next day! You can make this healthier by using light milk and low fat cheese, I dont usually recommending these in cooking, but it doesn't make much of a difference.

Ingredients:
For the meat sauce:
1 Tablespoon olive oil
1 Onion, diced
3 Cloves garlic, minced
500 grams mince (you can use beef, pork, veal or a combination)
1 Cup water
1/2 Cup tomato paste
1 beef stock cube

For the Bechamel (cheese) sauce:
60 grams butter or margarine
1/2 Cup plain flour
3 Cups milk
1/2 Cup Tasty cheese
1/2-1 Cup Mozzarella cheese

I packet fresh lasagne sheets
Salt & Pepper

Method:
1. You will need a rectangle shaped lasagne dish. Preheat oven to 180°C.
2. Heat olive oil in a fry pan. Cook onion until soft, add garlic and fry for about 1 minute.
3. Add mince and cook until completely brown.
4. Add tomato paste, stock cube and water, stir well. Reduce the heat and simmer for approximately 10 minutes, stirring occassionally until some of the liquid has evaporated. Season with salt & pepper.

5. Meanwhile, make the cheese sauce. Melt butter in a medium saucepan. Add flour and cook for 1-2 minutes until stirring continually (this is to cook out the raw flour flavour).



 


6. Add the milk in slowly and stir continuously until it boils and thickens.

7. Add tasty cheese and stir until it has melted


8. To Assemble:
Cover lasagne dish with 1/2 of the meat mixture

Add 1/3 of cheese sauce and 1 layer of lasagne sheets

Repeat the meat sauce, cheese sauce and lasagne
Add the remaining 1/3 of cheese sauce and top with mozzarella cheese to cover.

9. Place on a baking tray to catch any drips. Cook for 20-30 minutes until the top is golden brown and bubbling. Allow to sit for about 30 minutes before cutting.
